Baked Bean Arancini
Inspiration from a Sicilian favorite rolls up America’s favorite sweet, tangy Baked Beans with white wine Arborio rice, fresh basil, and Parmesan cheese. Coat with Panko breadcrumbs to form a crispy golden crust and serve with a side of warm marinara.

INGREDIENTS
Arancini
- 10 cups Bush’s Best® Bean Pot® Baked Beans, Drained
- 6 fl. oz. White Cooking Wine
- 6 ⅔ cups Low Sodium Vegetable Broth
- 3 ⅓ tsp Kosher Salt
- 1 ¾ tsp Black Pepper
- 3 ⅓ cups Arborio Rice
- 4 ¼ cups Parmesan Cheese, grated
- 2/3 cups Basil, Fresh Chiffonade
- 7 Eggs, Large
- 3 ⅓ cups Panko Breadcrumbs
- Panko Breadcrumbs for breading (As needed)
Garnish/Dip
- 1 ¼ cups Parmesan Cheese
- 12 ½ cups Marinara Sauce

DIRECTIONS
- Preheat a fryer to 350ºF.
- Bring wine and vegetable broth to a boil in a large saucepan.
- Add arborio rice and reduce heat to medium-low.
- Cover and simmer for about 20 minutes or until tender. Adjust seasoning with salt and pepper.
- In a mixing bowl, combine rice and beans with parmesan cheese, basil, eggs, and panko breadcrumbs. Season with salt and pepper. Mix ingredients together until well incorporated.
- In a separate mixing bowl, add panko breadcrumbs for breading.
- Roll the rice and bean mixture into 1/3-cup spheres.
- Roll each sphere in panko breadcrumbs before frying.
- Fry in batches while turning periodically for 4 minutes or until all sides are golden brown.
- Transfer the arancini to a sheet pan lined with paper towels to prevent sticking.
- For each portion, top one arancini with 1/2 Tbsp of freshly grated Parmesan cheese. Serve each portion with a 1/4 cup of warm marinara sauce for dipping.
