Baked Bean Arancini

Inspiration from a Sicilian favorite rolls up America’s favorite sweet, tangy Baked Beans with white wine Arborio rice, fresh basil, and Parmesan cheese. Coat with Panko breadcrumbs to form a crispy golden crust and serve with a side of warm marinara.

INGREDIENTS

Arancini

  • 10 cups Bush’s Best® Bean Pot® Baked Beans, Drained
  • 6 fl. oz. White Cooking Wine
  • 6 ⅔ cups Low Sodium Vegetable Broth
  • 3 ⅓ tsp Kosher Salt
  • 1 ¾ tsp Black Pepper
  • 3 ⅓ cups Arborio Rice
  • 4 ¼ cups Parmesan Cheese, grated
  • 2/3 cups Basil, Fresh Chiffonade
  • 7 Eggs, Large
  • 3 ⅓ cups Panko Breadcrumbs
  • Panko Breadcrumbs for breading (As needed)

Garnish/Dip

  • 1 ¼ cups Parmesan Cheese
  • 12 ½ cups Marinara Sauce

Arancini

  • 10 cups Bush’s Best® Bean Pot® Baked Beans, Drained
  • 6 fl. oz. White Cooking Wine
  • 6 ⅔ cups Low Sodium Vegetable Broth
  • 3 ⅓ tsp Kosher Salt
  • 1 ¾ tsp Black Pepper
  • 3 ⅓ cups Arborio Rice
  • 4 ¼ cups Parmesan Cheese, grated
  • 2/3 cups Basil, Fresh Chiffonade
  • 7 Eggs, Large
  • 3 ⅓ cups Panko Breadcrumbs
  • Panko Breadcrumbs for breading (As needed)

Garnish/Dip

  • 1 ¼ cups Parmesan Cheese
  • 12 ½ cups Marinara Sauce

DIRECTIONS

  1. Preheat a fryer to 350ºF.
  2. Bring wine and vegetable broth to a boil in a large saucepan.
  3. Add arborio rice and reduce heat to medium-low.
  4. Cover and simmer for about 20 minutes or until tender. Adjust seasoning with salt and pepper.
  5. In a mixing bowl, combine rice and beans with parmesan cheese, basil, eggs, and panko breadcrumbs. Season with salt and pepper. Mix ingredients together until well incorporated.
  6. In a separate mixing bowl, add panko breadcrumbs for breading.
  7. Roll the rice and bean mixture into 1/3-cup spheres.
  8. Roll each sphere in panko breadcrumbs before frying.
  9. Fry in batches while turning periodically for 4 minutes or until all sides are golden brown.
  10. Transfer the arancini to a sheet pan lined with paper towels to prevent sticking.
  11. For each portion, top one arancini with 1/2 Tbsp of freshly grated Parmesan cheese. Serve each portion with a 1/4 cup of warm marinara sauce for dipping.
