Black Bean Bibimbap
Build on the savory, satisfying Korean bibimbap bowl with spicy Black Beans, crunchy veggies, tangy kimchi, and a fried egg. Finish with sesame seeds, cilantro and spicy gochujang ketchup.

Gochujang Ketchup
- .5 cup Gochujang
- .25 cup Brown Sugar
- .25 cup Soy Sauce
- 2 cups Ketchup
Black Bean Fried Rice
- 1.5 cups Sesame Oil
- 1.5 cups Yellow Onions, Small Dice
- .5 cup Garlic, Fresh, Minced
- 12 cups Brown Rice, Cooked, Cooled
- 1.5 cups Carrots, Julienne
- .75 cup Kimchi, Sliced
- 9 cups Bush's Best® Easy Entrées® Taco Fiesta Black Beans, Drained
- 2 Tbsp Kosher Salt
- 1 Tbsp Black Pepper
Bibimbap Garnish
- 4 cups Cucumbers, Fresh, Thin-Sliced Half Moon
- 10 Tbsp Toasted Sesame Seeds
- 2 cups Scallions, Thin-Sliced
- 2 cups Cilantro, Fresh, Chopped
- 31 Eggs, Sunny Side Up

DIRECTIONS
- GOCHUJANG KETCHUP: Whisk together all ingredients in a large mixing bowl until well incorporated.
- BLACK BEAN FRIED RICE: Place a large wok or non-stick sauté pan over high heat. Add sesame oil, onions, and garlic.
- Sauté, stirring constantly for 1–2 minutes until beginning to caramelize.
- Add rice, stirring frequently, until rice begins to caramelize and get slightly crispy.
- Stir in carrots and kimchi. Incorporate beans. Cook until beans are heated through.
- Adjust seasoning with salt and pepper as needed and hold hot.
- PRESENTATION: For one serving, place 1 cup of black bean fried rice into a serving bowl.
- Top with 2 Tbsp sliced cucumbers, 1 tsp sesame seed, 1 Tbsp scallion, 1 Tbsp cilantro, and 1 fried egg.
- Drizzle each bowl with 1 Tbsp of gochujang ketchup and serve immediately.
