Warm Mediterranean Chicken & Garbanzo Bean Wrap
Serve a healthy option with fresh Mediterranean flavors. Bush’s Best® Garbanzo Beans and sautéed chicken are wrapped in a garlic-herb tortilla with spinach, feta and a sprinkle of green olive tapenade.

INGREDIENTS
Olive Tapenade
- 1 ½ cups Manzanilla olives, deseeded
- 1 ½ cups Greek green olives, deseeded
- ¾ cup Kalamata olives, deseeded
- 3 Tbsp Capers, drained
- 1 ½ tsp Garlic cloves
- 3 tsp Lemon juice, fresh
- ¾ cup Extra virgin olive oil
- 3 tsp Sage, fresh
- 3 tsp Thyme, fresh
Chicken & Garbanzo Bean Wrap
- 24 each 12" Garlic herb tortilla wraps
- 6 lbs Chicken breast, medallions
- 3 tsp Salt
- 1 ½ tsp Pepper
- 1, #10 can Bush's® Best® Garbanzo Beans, drained and rinsed
- 12 oz Roasted bell peppers
- 12 cups Spinach, flash fried
- 3 cups Feta, crumbles
- 3 cups Olive tapenade, see recipe

- 12 cups Spinach, flash fried
- 3 cups Feta, crumbles
- 3 cups Olive tapenade, see recipe
DIRECTIONS
- OLIVE TAPENADE: Combine all ingredients in a food processor and pulse until finely chopped. Refrigerate and use as needed.
- CHICKEN & GARBANZO BEAN WRAP: In a sauté pan over medium heat, combine chicken medallions and garbanzo beans, season with salt and pepper; cook until chicken reaches an internal temperature of 165°F.
- To assemble, in a warm tortilla, spread 2 Tbsp olive tapenade, 5.5 oz chicken/bean mix, ½ cup spinach, 2 Tbsp feta and 3 strips (0.5 oz) roasted bell pepper. Roll and cut on a bias.
