Not a Pecan Pie Smoothie

It’s not a pie. But it sure tastes like one. Creamy Cannellini, vanilla ice cream, milk, cinnamon and candied pecans make it happen. Topped with aquafaba brûlée and a crunchy “crust” of candied pecans.

INGREDIENTS

Smoothie

  • 13.5 cups Bush’s Best® Cannellini Beans, Drained, Rinsed
  • 4.5 quarts Vanilla Ice Cream, partially melted
  • 2.25 cups Sweetened Condensed Milk
  • 1.25 quarts Whole Milk
  • 1.25 quarts Candied Pecans, Prepared
  • 3 Tbsp Cinnamon, Powdered
  • 1.25 quarts Ice

Whipped Vanilla Aquafaba

  • 2.25 cups Liquid from Bush’s Best® Garbanzo Beans (Aquafaba)
  • 4.5 cups Confectioners’ Sugar
  • 2.25 tsp Cream of Tartar
  • 4.5 tsp Vanilla Extract

Garnish

  • 1.75 cups Candied Pecans, Prepared, Crumbled

Whipped Vanilla Aquafaba

  • 2.25 cups Liquid from Bush’s Best® Garbanzo Beans (Aquafaba)
  • 4.5 cups Confectioners’ Sugar
  • 2.25 tsp Cream of Tartar
  • 4.5 tsp Vanilla Extract

Garnish

  • 1.75 cups Candied Pecans, Prepared, Crumbled

DIRECTIONS

  1. SMOOTHIE: Combine all ingredients in the jar of a high-speed blender. For larger yield recipe, divide ingredients into batches or use 64-oz blender jar. Begin on low speed gradually increasing to high speed and then blending for 1 minute or until smooth and creamy. Reserve chilled.
  2. WHIPPED VANILLA AQUAFABA: Strain aquafaba (garbanzo bean liquid) into a mixing bowl. Using a stand or hand mixer whisk attachment, whisk aquafaba on high speed until it begins to foam.
  3. Add cream of tartar, continuing to whisk on high speed until the liquid thickens and resembles meringue (about 30 seconds).
  4. Reduce speed to medium, add vanilla extract, then slowly add in the confectioners’ sugar. Continue to whip until the aquafaba forms stiff peaks. Transfer whipped aquafaba into a piping bag. Store refrigerated until ready to use.
  5. PRESENTATION: For each smoothie, portion 3/4 cups of Not a Pecan Pie Smoothie into an 8-oz. cup. Using the piping bag, squeeze 1/4 cup of the whipped vanilla aquafaba on top. Gently brûlée the top of the vanilla aquafaba until golden, and then top with ½ Tbsp candied pecans.
