Ranchero Chopped Veggie Salad
Featuring Bush’s Best® Texas Ranchero® Pinto Beans and crisp romaine lettuce tossed in a creamy poblano-lime buttermilk dressing, this is a plant-based chopped salad that’s missing nothing. Pickled onions, tangy Pico de Gallo, creamy avocados, crunchy chipotle pepitas, and shredded Mexican cheeses come together to complete a bright, vibrant burst of flavor in every crisp, refreshing bite.

INGREDIENTS
Salad
- 1 ½ cups Bush’s® Best Texas Ranchero® Beans, warmed*
- 2 lb romaine lettuce, chopped
- ½ cup pickled onions
- ¾ cup pico de gallo
- 3 each avocados, peeled, seeded and diced
- 1 cup Mexican shredded cheese blend
- 1 cup toasted spicy pepitas**
- *Note: If using the full foodservice can, multiply recipe 9 times.
- **If not available for purchase, dust seeds with chipotle powder
Poblano Dressing
- 2 poblanos roasted, peeled and seeded
- ¼ cups lime juice
- ¼ cup chopped scallions
- 1 cup mayonnaise
- 1 cup buttermilk
- Salt and pepper (as needed)

Poblano Dressing
- 2 poblanos roasted, peeled and seeded
- ¼ cups lime juice
- ¼ cup chopped scallions

DIRECTIONS
- Warm beans and hold until ready to serve.
- POBLANO DRESSING: Blend all ingredients on high speed for 2-3 minutes, until smooth and pureed. Taste and season with salt and fresh ground pepper if needed.
- To assemble, toss lettuce and dressing in a large mixing bowl until combined. Place lettuce onto serving plates and top with pickled onions, pico de gallo, avocado, and cheese. Finish with a warm spoonful of seasoned beans and garnish with spicy pepitas. Drizzle with a touch of extra dressing and serve immediately.
