INGREDIENTS
- 1 gal + 9 cups Bush’s Best® Easy Entrees™ Texas Ranchero® Pinto Beans
- 1 gal + 9 cups Rice, long grain, brown, cooked without salt
- 100 Tortillas, whole grain frozen
- 6 ½ lbs Pulled pork, plain no sauce
- 1 #10 can Bush’s Best® Garbanzo Beans
- 22.1 oz Tahini
- 17 oz Olive Oil
- 11.9 oz Lemon Juice
- 1 oz Garlic Paste
- 6 ¼ gal Romaine lettuce, rough chopped
- 11 ½ lb. Tomatoes, ½” diced
- 11 ½ oz. Green onions, thinly sliced
- 12 ½ cups Cilantro, fresh, rough chopped

DIRECTIONS
- Place tortillas in the warmer for 30 minutes.
- Place 8 cups of dry brown rice into 12" x 20" x 4" steam table pan. Pour 1 gallon of boiling water over brown rice. Stir. Cover pan tightly.
- Bake on 400 °F for 35-40 minutes or until water is absorbed into rice. Remove from oven.
- Heat Texas Ranchero Pinto Beans according to package directions. Heat pulled pork according to package instructions.
- Prepare hummus by combining drained garbanzo beans with tahini, olive oil, lemon juice, and garlic paste in a large mixing vessel. Puree, with an immersion blender, until smooth and thoroughly combined hummus is formed (makes approximately 13 C). Reserve chilled.
- Assemble each burrito bowl: Place warm tortilla on tray. Spread 1/4 cup (#16 scoop) of hummus evenly onto tortilla. Top with 1 cup chopped lettuce, 1/4 cup drained Texas Ranchero Pinto Beans, 1 oz. pulled pork, 1/4 cup tomatoes, 2 Tbsp. cilantro, and 2 Tbsp. green onions. Serve immediately.
