  • 2.25 qt. Yellow Onion, Halved, Thin-Sliced
  • 2.25 qt. Cremini Mushroom, Thin-Sliced
  • 2.25 qt. Bush's® Best® Easy Entrées® Texas Ranchero® Pinto Beans, Drained
  • 2.25 tsp Allspice, Powdered
  • 2.25 tsp Clove, Powdered
  • 3 Tbsp Kosher Salt
  • 1.5 Tbsp Black Pepper

  • 2.25 qt. Cremini Mushroom, Thin-Sliced

DIRECTIONS

  1. HAND PIE FILLING: Add vegetable oil to a large sauté pan set to medium heat. Add yellow onion to the pan, season with salt and pepper. Continue to cook the onions for 10–15 minutes or until onions are translucent and lightly caramelized.
  2. Add mushrooms stir periodically for 10 minutes or until mushrooms are browned. Add allspice and clove. Season with salt and pepper. Cook until allspice and clove are fragrant, about 1–2 minutes.
  3. Add beans and cook for 5 more minutes, stirring periodically, to bring all the flavors together. Cool and refrigerate.
  4. ASSEMBLE & BAKE: Preheat a convection oven to 425ºF.
  5. In a mixing bowl, whisk together egg yolks and water.
  6. Place 1 puff pastry sheet on a lightly floured surface. Gently brush the surface of the dough with the egg wash mixture. Spoon 1½ Tbsp of filling on top of the puff pastry dough in a 3 by 3 formation. Top with additional puff pastry sheet. Cut into 9 hand pies. Repeat until all hand pies have been cut.
  7. Gently close the hand pie edges by pressing with a fork.
  8. Place hand pies on a sheet pan lined with parchment paper. Make two small slits in the center of each hand pie for ventilation.
  9. Brush each hand pie with egg wash before baking for 12–15 minutes or until golden brown.
