Served on the side or as an appetizer, these fried golden fritter bites bring together smoky flavor with savory spices, zesty Black Beans, sweet corn, cotija cheese, and cilantro. Serve garnished with chili crema, more cheese, and white onion.

DIRECTIONS
- CHILI CREMA: Combine all ingredients in a mixing bowl and whisk together until smooth. Cover and refrigerate.
- FRITTERS: Pre-heat a fryer filled with vegetable oil to 325ºF.
- In a mixing bowl, combine all-purpose flour, baking powder, chili powder, smoked paprika, kosher salt, and black pepper. Mix until ingredients are well incorporated.
- In a separate bowl, mix together Bush’s Best® Easy Entrées® Taco Fiesta™ Black Beans, sweet corn kernels, mayonnaise, cotija, and cilantro until well combined.
- In stages, fold the dry ingredients into the bean mixture. Continue to mix until thoroughly combined.
- For each fritter, spoon 2 Tbsp batter into the fryer and fry until light golden brown, about 1–2 minutes each side. Remove fritters from the oil and transfer onto a sheet pan lined with paper towels to drain excess oil.
- Working in batches, gently toss fritters with Tajin seasoning in a large mixing bowl until well coated.
- PRESENTATION: Drizzle with chili crema before topping with cotija cheese, chopped onion and cilantro. Serve 3 fritters per portion.
