Sunrise Shakshuka

Shake things up for breakfast or serve a standout brunch-style dip with hearty, comforting North African-inspired shakshuka. A smoky, simmered combination of spiced tomatoes, seasoned Black Beans and veggies bake up with fresh-cracked eggs and crumbled feta to serve alongside toast or a sliced baguette.

  • 1.75 cups Olive Oil
  • 2.25 qt. Yellow Onion, Small Dice
  • 2.25 qt. Red Bell Pepper, Thin-Sliced
  • 9 Tbsp Garlic, Fresh, Minced
  • 4.5 Tbsp Paprika
  • 4.5 Tbsp Cumin
  • 2.25 tsp Cayenne Pepper
  • 6.75 qt. Crushed Tomatoes, Canned
  • 18 cups Bush’s Best® Easy Entrées® Taco Fiesta Black Beans
  • 4.5 Tbsp Kosher Salt
  • 2.25 tsp Ground Black Pepper

  • 1.75 cups Olive Oil

Sunrise Shakshuka

DIRECTIONS

  1. SHAKSHUKA BASE: Heat a saucepan over medium heat. Add olive oil, onions garlic and bell pepper. Cook until softened and onions are translucent (8–10 minutes).
  2. Stir in paprika, cumin, and cayenne and cook for another minute.
  3. Add crushed tomatoes and beans. Season with salt and pepper. Raise heat to medium-high. Simmer the tomatoes while stirring periodically for 15–20 minutes or until tomatoes have thickened.
  4. FINISH & SERVE: Pre-heat a convection oven to 375ºF. Transfer the shakshuka base recipe into to a shallow, oven-safe pan.
  5. Gently crack the eggs over the top of the pan and season with salt and pepper. Sprinkle with crumbled feta throughout the top of the pan and bake for 8–10 minutes or until eggs are set. Garnish with fresh-chopped parsley.
  6. For one portion, serve 1 cup of shakshuka and one egg with 2-oz. of butter toasted baguette slices for dipping.
