INGREDIENTS

Filling

  • 9 cups Bush’s Best® Easy Entrées® Texas Ranchero® Pinto Beans, Drained
  • 2.25 cups Granulated Sugar
  • 4.5 tsp Kosher Salt
  • 2.25 cups Rice Flour

Rice Dough

  • 5.25 cups Warm Water
  • 4 cups Brown Sugar, Light
  • 4 qt. Sweet Rice Flour, plus more as needed
  • 1.5 qt. White Sesame Seeds

INGREDIENTS

Filling

  • 9 cups Bush’s Best® Easy Entrées® Texas Ranchero® Pinto Beans, Drained
  • 2.25 cups Granulated Sugar
  • 4.5 tsp Kosher Salt
  • 2.25 cups Rice Flour

Rice Dough

  • 5.25 cups Warm Water
  • 4 cups Brown Sugar, Light
  • 4 qt. Sweet Rice Flour, plus more as needed
  • 1.5 qt. White Sesame Seeds

DIRECTIONS

  1. FILLING: Using a food processor, combine beans, granulated sugar, and salt until a smooth paste is formed. Scrape into a saucepan. Simmer over medium heat for 5 minutes to reduce. Transfer reduced mixture to a bowl. Fold in the rice flour and mix until the mixture forms a paste. Cool and refrigerate for 2 hours or until chilled before using.
  2. RICE DOUGH: Whisk together warm water and brown sugar in a mixing bowl until sugar is dissolved. Place flour into a separate mixing bowl. Pour sugar-water mixture over flour and hand mix until a dough forms. Cover and refrigerate for 15 minutes.
  3. ASSEMBLE: Follow directions for filling and rice dough and chill as directed. Pre-heat a fryer to 325ºF. Measure white sesame seeds into a small mixing bowl.
  4. For each sesame ball, flatten out rice dough into 1 oz. disks. Use sweet rice flour as needed to prevent sticking.
  5. Spoon 1 Tbsp bean paste into the middle of each disk. Remold the dough so that it forms a ball around the paste. Roll each ball in the sesame seeds until well coated.
  6. Fry each sesame ball for 8–10 minutes or until golden and crispy.
  7. Transfer sesame balls to a paper-towel lined sheet pan to drain. Allow to cool for 5 minutes before serving. Serve 2 sesame balls per person.
