INGREDIENTS

  • 1, #10 can Bush’s Best® Cannellini Beans, drained, not rinsed
  • 22.1 oz Tahini
  • 17 oz Olive Oil
  • 11.9 oz Lemon Juice
  • 1 oz Garlic Paste
  • 2 tbsp Peanut butter, creamy
  • 2 tsp Sriracha
  • ½ tsp Ground ginger
  • ¼ tsp Roasted peanuts, unsalted
  • 2 tbsp Coconut flakes, unsweetened
  • 2 tbsp Scallions, fresh sliced
  • 5 Spinach tortillas, 12 inch
  • 2 ½ cups Romaine lettuce, rough chop
  • 2 ½ cups Mung bean sprouts, fresh
  • 1 ¼ cups Matchstick carrots, fresh
  • 10 oz Roasted chicken, ¾” diced
  • 10 fresh whole sprigs Cilantro

  • 1, #10 can Bush’s Best® Cannellini Beans, drained, not rinsed
  • 22.1 oz Tahini
  • 17 oz Olive Oil
  • 11.9 oz Lemon Juice
  • 1 oz Garlic Paste
  • 2 tbsp Peanut butter, creamy
  • 2 tsp Sriracha
  • ½ tsp Ground ginger
  • ¼ tsp Roasted peanuts, unsalted
  • 2 tbsp Coconut flakes, unsweetened
  • 2 tbsp Scallions, fresh sliced
  • 5 Spinach tortillas, 12 inch
  • 2 ½ cups Romaine lettuce, rough chop
  • 2 ½ cups Mung bean sprouts, fresh
  • 1 ¼ cups Matchstick carrots, fresh
  • 10 oz Roasted chicken, ¾” diced
  • 10 fresh whole sprigs Cilantro

DIRECTIONS

  1. Place drained Bush's® Best® Cannellini Beans, tahini, olive oil, lemon juice, and garlic paste into a large mixing vessel.
  2. Puree, with an immersion blender, until smooth and thoroughly combined, creating Cannellini Bean Hummus (makes approximately 13 cups). Reserve chilled.
  3. Place 1 cup of the reserved Cannellini Bean Hummus, 2 Tbsp peanut butter, 2 tsp sriracha, ½ tsp ground ginger, ¼ cup roasted peanuts, 2 Tbsp coconut flakes, and 2 Tbsp scallions in a mixing bowl and stir to evenly combine, creating Thai Peanut Hummus. Reserve chilled.
  4. To serve: Warm 1 spinach tortilla. Evenly spread approximately ¼ cup of reserved Thai Peanut Hummus across the entire tortilla. Then stack in lower middle of tortilla; ½ cup romaine lettuce, ½ cup mung bean sprouts, ¼ cup carrots, 2 oz. roasted chicken, and 2 whole cilantro sprigs. Fold in both sides of the tortilla then roll into a wrap, slice in half crosswise and serve. Repeat for remaining 4 orders.
