Vegetarian Smokehouse Meatloaf
Meatless Mondays to everyday vegetarians, this classic-inspired dish brings nostalgia and a whole lot of flavor to the table. Seasoned Taco Fiesta™ Black Beans combine with fresh garlic, onion, jalapeños, mushrooms, cracker crumbs and tangy sauces. Finish with BBQ sauce and melted pepper jack cheese.

INGREDIENTS
- 2.25 Qt Bush’s Best® Easy Entrées® Taco Fiesta™ Black Beans, Drained, Puréed
- 9 Tbsp Garlic, Fresh, Minced
- 2.25 Qt Yellow Onion, Fresh ¼-inch Diced
- 2.25 cup Jalapeños, Fresh, Finely Diced
- 2.25 Qt Cremini Mushrooms, Fresh, Finely Diced
- 2.25 Qt Ritz Crackers, Crushed
- 4.5 cups BBQ Sauce, Prepared, Divided
- 3 Tbsp Worcestershire Sauce
- 9 Large Eggs
- 3 Tbsp Kosher Salt
- 4.5 tsp Ground Black Pepper
- 2.25 cups Pepper Jack Cheese, Shredded

DIRECTIONS
- Preheat a convection oven to 400 Degrees F. In a large mixing bowl, combine all ingredients except for the shredded pepper jack cheese and half the BBQ sauce.
- Mix ingredients for 2 minutes or until completely incorporated.
- Mold the mixture into 1½-lb. logs.
- Place each loaf on a parchment lined sheet pan and bake for 40 minutes or until crisp and golden brown.
- Spread remaining BBQ sauce over each loaf (1/4 cup each) before topping with pepper jack cheese (1/4 cup each).
- Bake for an additional 10 minutes. Cool for 10 minutes before serving.
- Gently cut each loaf into 2-oz. slices. Serve 2 slices per person. Each loaf will serve 6.
