Meatless Meatball Sub

This vegetarian version of a classic meatball sub proves that nothing’s missing. Black Beans and Garbanzos create tender meatless meatballs along with fresh garlic, breadcrumbs, Italian seasoning, and red wine vinegar. Bake to crisp, golden perfection, place on a hoagie roll, and smother with marinara sauce and dairy-free cheese.

INGREDIENTS

  • 3 cups Olive Oil
  • 3 Qt Bush’s Best® Low Sodium Black Beans, Drained, Rinsed
  • 3 Qt Bush’s Best® Low Sodium Garbanzo Beans, Drained*, Rinsed
  • 1.5 cup Garbanzo Bean Canning Liquid (Aquafaba)
  • .75 cup Garlic, Fresh, Minced
  • 1.5 Qt Yellow Onion, Diced
  • 3 Qt Panko Breadcrumbs
  • 6 Tbsp Italian Seasoning
  • 1.5 cup Red Wine Vinegar
  • 0.25 cup Kosher Salt
  • 1 Tbsp Ground Black Pepper
  • 40 Hoagie Rolls, 6-inch, Hinge-Cut
  • 5 Qt Marinara Sauce, Prepared, Reserved Warm
  • 2.5 Qt Dairy-Free Mozzarella Cheese, Shredded
  • *Note: Reserve Garbanzo liquid for meatless mixture.

  • 3 cups Olive Oil
  • 3 Qt Bush’s Best® Low Sodium Black Beans, Drained, Rinsed
  • 3 Qt Bush’s Best® Low Sodium Garbanzo Beans, Drained*, Rinsed
  • 1.5 cup Garbanzo Bean Canning Liquid (Aquafaba)
  • .75 cup Garlic, Fresh, Minced
  • 1.5 Qt Yellow Onion, Diced
  • 3 Qt Panko Breadcrumbs
  • 6 Tbsp Italian Seasoning
  • 1.5 cup Red Wine Vinegar
  • 0.25 cup Kosher Salt
  • 1 Tbsp Ground Black Pepper
  • 40 Hoagie Rolls, 6-inch, Hinge-Cut
  • 5 Qt Marinara Sauce, Prepared, Reserved Warm
  • 2.5 Qt Dairy-Free Mozzarella Cheese, Shredded
  • *Note: Reserve Garbanzo liquid for meatless mixture.

DIRECTIONS

  1. Preheat a convection oven to 400°F.
  2. Combine olive oil, black beans and garbanzo beans in the base of a food processor until smooth and creamy.
  3. Transfer mixture to a mixing bowl. Fold in remaining ingredients and mix well.
  4. Create 2 oz. "meatballs" with the mixture and place on a parchment-lined baking sheet.
  5. Bake for 20 minutes or until crisp and golden. Reserve warm.
  6. Preheat a convection oven to broil.
  7. For one portion, place 3 meatless meatballs into sliced hoagie roll. Top with 1/2 cup marinara and 1/4 cup shredded dairy-free cheese.
  8. Broil each hoagie for 1–2 minutes or until cheese is golden and bubbly.
