INGREDIENTS

Breakfast Sausage Chili

  • 2 lb breakfast sausage, uncooked
  • 1 cup red onions, diced
  • 2 Tbsp jalapeños, fresh, seeded and diced
  • 4 cups Bush’s Best® Chili Magic® Chili Starter
  • 2 cups chunky tomato salsa

Crunch Wrap

  • 36 each cage free eggs
  • 1 cup heavy cream
  • 2 Tbsp oil
  • Salt and pepper, to taste
  • 12 each extra large flour tortillas
  • 12 each premade 3.5-inch crispy corn tostadas
  • 1 recipe breakfast sausage chili
  • 3 lb Monterey Jack cheese, shredded
  • ¼ cup cilantro, fresh, chopped

INGREDIENTS

Breakfast Sausage Chili

  • 2 lb breakfast sausage, uncooked
  • 1 cup red onions, diced
  • 2 Tbsp jalapeños, fresh, seeded and diced
  • 4 cups Bush’s Best® Chili Magic® Chili Starter
  • 2 cups chunky tomato salsa

  • Salt and pepper, to taste

  • 1 recipe breakfast sausage chili
  • 3 lb Monterey Jack cheese, shredded
  • ¼ cup cilantro, fresh, chopped

DIRECTIONS

  1. In a medium heavy-bottom pot, brown ground breakfast sausage on medium-high heat and reduce the fat, stirring continuously with a wooden spoon. Add diced red onions and chopped jalapeños and stir to incorporate for 2 minutes. Deglaze pan with Bush’s Best® Chili Magic® Chili Starter and salsa. Simmer for 15-20 minutes on medium to reduce. Remove from heat and let rest.
  2. Crack eggs and whisk with heavy cream. Warm a nonstick sauté pan and add oil. Stream in whisked eggs, and with a spatula and heat on medium-low, continuously move eggs in pan to cook. This should take about 7-10 minutes. Let eggs slowly pull away from pan and set up. Season with salt and pepper to taste.
  3. To assemble wrap, preheat a griddle to medium heat. Place tortilla on griddle and warm to the touch.
  4. Spread about a cup of cooked eggs across center of tortilla. Then, place a crispy tostada over the eggs, and top with a ¼ cup of the breakfast chili, 2 oz of cheese and chopped cilantro.
  5. Fold edges of the tortilla up and over the tostada and fillings. Toast wrap on griddle to melt cheese and brown tortilla gently on both sides, about 3-4 minutes. Serve immediately.
