Taco Fiesta Lasagna Family Meal

Simmered ground beef studded with zesty taco fiesta black beans, garlic and caramelized onions layered with tortilla rounds, zesty marinara sauce, creamy ricotta, and shredded Monterey jack cheese before baking until golden brown.   • 24 each Flour Tortilla, 6"
  • 24 oz Taco Fiesta Meat Sauce
  • 15 oz Ricotta
  • 1.25 cups Caramelized Onions

INGREDIENTS

Lasagna

  • 4 oz Marinara
  • 24 each Flour Tortilla, 6"
  • 24 oz Taco Fiesta Meat Sauce
  • 15 oz Ricotta
  • 1.25 cups Caramelized Onions
  • 3 cups Monterey Jack Cheese, Shredded

Taco Fiesta Meat Sauce

  • 2 Tbsp Canola Oil
  • 2 lbs. Ground Beef, Sautéed
  • 108 oz Bush's Best® Easy Entrees® Taco Fiesta Black Beans
  • 3 Tbsp Old Paso Taco Seasoning
  • 2.5 cups Marinara, Prepared

DIRECTIONS

  1. TACO FIESTA LASAGNA FAMILY MEAL: Have all ingredients for the lasagna lined up and ready for assembly.
  2. In a 4" half hotel pan assemble lasagna in this order: • Spread 4 oz of marinara across the bottom of pan • Place 4 tortillas on top of marinara evenly • Spread 8 oz of meat sauce over tortillas • Spread 3 oz of ricotta over meat sauce • Sprinkle caramelized onions over the meat sauce • Sprinkle cheese over the onions evenly
  3. Repeat process 4 more times in the same order. Add your last 4 remaining tortillas, followed by 8oz of meat sauce and .5 cuts on Monterey cheese.
  4. Cover the hotel pan with aluminum foil and bake for 35 minutes at 350°F. Remove foil and bake for an additional 10 minutes until the cheese gets golden brown. Allow an additional 30-45 minutes to cool before cutting.
  5. Serve 4 slices of lasagna with 4, 2 cup portions of Caesar salad and 4, 16 oz portions of horchata or Agua fresca.
  6. TACO FIESTA MEAT SAUCE: Heat up 2 tablespoons of canola oil in a sauce pot over medium high heat and add the ground beef. With a wooden spoon, break up the ground beef and stir it every couple of minutes until all the ground beef is broken up and it is cooked completely.
  7. Add the Taco Fiesta Black Beans, lowing the heat to a medium heat. Add the taco seasoning and marinara and stir the meat sauce to dissolve and incorporate the seasoning. Once the sauce comes to a simmer, turn off the heat.
  8. Strain the meat sauce in a china cap to rid any excess liquid. Do not throw away. The liquid is good for making rice.
